The Work

Cocktails have taken me further than I ever expected.

From creating menus for luxury hotels and developing signature serves to competitions, brand collaborations, private experiences and creative projects, every opportunity has added something to the bartender I am today.

This is a selection of the work, collaborations and experiences that have shaped The Suave Bartender.

House Of Suntory

My relationship with House of Suntory began through the Suntory DOJO programme in 2022, where I competed as a finalist and had the opportunity to work closely with the portfolio and the people behind it.

That relationship continued beyond the competition. At The Grove, I developed five original cocktails showcasing Haku Vodka, Roku Gin, Toki Whisky, Hibiki Japanese Harmony and Yamazaki 12, bringing each spirit into its own serve while retaining the character that made it distinctive.

I later worked with House of Suntory around its 100-year anniversary celebrations, including a menu takeover at Lucy Wong - another opportunity to take the relationship beyond the bottle and into a complete guest experience.

What began with a competition became an ongoing creative relationship.

Taking The Suave Bartender across the Atlantic.

My work with Fortunella led to an opportunity in Austin, Texas, creating a cocktail menu for The Powder Room - bringing together my own style of drinks with a brand I’d already built a relationship with in the UK.

The project gave me the freedom to develop a menu specifically for the venue, creating original serves designed around Fortunella while still carrying the character and approach that had become part of The Suave Bartender.

It was also one of those moments where the work began to feel bigger than the bar I happened to be standing behind.

Sometimes the best opportunities begin with a conversation.

My time in Austin led to the opportunity to create a bespoke cocktail experience for Shawn Johnson, where I was invited to her home to record a two-hour podcast episode centred around cocktails, creativity and the stories behind the drinks.

For the experience, I developed the cocktails from the ground up - preparing bespoke syrups and ingredients and creating serves specifically for the occasion, including “Shawn n Jen,” a cocktail created for the occasion.


What started as an invitation to make drinks became an afternoon built around conversation, storytelling and hospitality - exactly the kind of experience I believe cocktails should create.

Fortunella

Get in Touch

Some collaborations last longer than a single project.

My relationship with Fortunella began through its cocktail competition, where I was selected as a finalist. What started with one cocktail quickly developed into an ongoing creative relationship with the brand and its founder, Lukas Stafin.

Since then, Fortunella has found its way into numerous original serves and projects - from cocktail development in the UK to the Lucy Wong takeover and, eventually, across the Atlantic to Austin, Texas and The Powder Room.

What I’ve valued most has been the freedom to create. Rather than simply putting a bottle into a drink, the relationship has given me opportunities to explore the ingredient, build cocktails around it and introduce it to guests through my own style of bartending.


One competition opened the door.
Everything since has been built through the relationship.

What’s Next?

This is only part of the story.


Every menu, collaboration, competition and experience has added something to The Suave Bartender - and there’s still plenty left to create.


New drinks. New places. New stories.
